The Kerala Series is built around the flavours, techniques and dishes of Kerala cooking.

We created each current kit to bring together three parts: a Cooking Sauce, a spice masala Marination Mix and a Tempering Mix. You get the convenience of a Kerala curry sauce, the flexibility of a regional spice blend and the final aroma of a traditional tempering step.

Built for kitchens outside Kerala and South India, especially in the UK and other international markets, the Kerala Series helps make regional ingredients, specialist knowledge and consistent South Indian flavour easier to access.

REGIONAL ROOTS

Kerala: Coconut, Spices and Coastal Cooking

Kerala (കേരളം) is a tropical state on India’s south-west coast, known for coconut palms, spice-growing hills, backwaters and coastal food culture.

The name Kerala is often linked to “kera”, meaning coconut tree, and coconut still gives many dishes their body, softness and richness. The region is also known for prized spices and aromatics such as Tellicherry pepper, Idukki cardamom, Edayur chilli, Thalanadan clove and kudampuli.

Shaped by its coast and centuries of maritime trade, Kerala’s cooking moves from tangy seafood dishes and roasted aromatics to gentle coconut-rich curries and bold onion-led roasts. We built the Kerala Series to respect that variety, not reduce it into one generic curry flavour.

In many Kerala homes, cooking is learned by watching, tasting and adjusting. We grew up around that kind of cooking, where family cooks pass down small lessons: how much spice is enough, when onions are ready, how coconut changes a gravy, when to add sourness and how to finish a dish with tempering.

That knowledge is powerful, but it is not always easy to carry into modern life. People are busy, ingredients are not always nearby, and the small techniques that make a dish feel right can be hard to repeat, especially outside Kerala.

That is why we built each current product around a clear Kerala flavour profile, not a generic restaurant-style curry sauce.

People want proper Kerala flavour, but recreating it consistently outside India can be hard. Kerala cooking does not come from one generic base gravy. Each dish has its own route. Each current Kerala Series kit brings together a Cooking Sauce, a spice masala Marination Mix and a Tempering Mix. The sauce gives body, the marination mix supports flavour before cooking, and the tempering mix adds the final aroma and finish.

We take care of the hard-to-source flavour-building elements, so you do not need to buy a long list of individual spices before you start. But the creative control stays with you. Choose your protein, adjust the heat, change the texture, or add fresh shallots, curry leaves or chillies if you have them.

We do not replace the cook. We give you a better foundation.

The range draws from the same recipes and flavour standards we use in our catering and food club menus, then adapts them into a practical shelf-stable retort format for modern kitchens.

How is CoChilli Pro different from standard supermarket curry sauces?

Most supermarket curry sauces are one-jar shortcuts. CoChilli Pro works differently. Each current Kerala Series kit includes a Cooking Sauce, a spice masala Marination Mix and a Tempering Mix, so you season, cook and finish the dish with more control.

Do I need to know how to cook South Indian food?

No. The kit gives you the key steps in the right order. You do not need to understand every spice, souring agent or tempering technique before you start.

Do I need to buy extra spices?

Not to get started. The main spice masala blend and tempering elements are included. You can still add fresh curry leaves, shallots, chillies, coconut oil or your own aromatics if you have them.

Can I change the recipe?

Yes. CoChilli Pro is a foundation, not a fixed script. You choose the protein or vegetables, adjust the liquid, control the heat and finish the dish in your own style.

Do I have to use the Marination Mix and Tempering Mix?

No. They are included for consistency and convenience. If you prefer to use fresh aromatics or your own spice method, you can do that too.

Which Kerala Series product should I start with?

Start with Kerala Nadan Curry Base for a balanced everyday Kerala profile. Choose Varutharacha for roasted coconut depth, Classic Onion Roast for bolder masala-style dishes, Kudampuli Red Fish for seafood and Mappas for a gentler coconut-rich profile.

Can I use the same kit for different dishes?

Yes. Each product can create classical Kerala-style dishes, but you can also use it creatively with different proteins, vegetables and serving styles.

The Cooking Sauce, Marination Mix and Tempering Mix reduce the need to build every sauce, spice blend and finish from scratch. This can help with prep planning, staff training and batch consistency.

Does it reduce dependency on specialist regional chefs?

It can help. Kerala cooking still benefits from skill and judgement, but CoChilli Pro gives kitchens a stronger starting point when specialist South Indian chefs are hard to find or not available on every shift.

Can the products work for buffet and batch cooking?

Yes. The Maxi format is designed for larger batches, catering, buffet service and foodservice use. Kitchens should still follow their own holding, reheating and food-safety procedures.

Can chefs adapt the final dish?

Yes. The system gives a reliable Kerala-rooted foundation, but the final control stays with the kitchen. You can adjust consistency, add fresh aromatics, change protein, combine bases or build your own menu applications.

Are the products suitable for plant-based dishes?

The current Kerala Series kits are plant based. You can use them with vegetables, legumes, tofu or other suitable ingredients, depending on your menu.

What allergen wording should we use?

Use the approved wording: No Dairy Ingredients, No Gluten Ingredients and No Nut Ingredients. Do not describe the products as dairy-free, gluten-free or nut-free unless that claim is separately verified and approved.

Why should a trade kitchen consider CoChilli Pro instead of a normal curry sauce?

A normal sauce gives speed, but often limits the final dish. CoChilli Pro gives sauce body, spice masala seasoning and tempering as separate parts, so kitchens get convenience with more control over the final result.
