A modern Kerala-inspired taco recipe with spiced chicken, fresh slaw and soft tortillas.
Ingredients
Spiced Chicken

700 g boneless chicken thigh, cut into strips

1 tablespoon coconut oil

1 small onion, finely sliced

1 tablespoon ginger-garlic paste

1 teaspoon coriander powder

1 teaspoon Kashmiri red chilli powder

½ teaspoon turmeric powder

½ teaspoon ground black pepper

½ teaspoon fine salt

100 ml coconut milk
Slaw
-
150 g shredded cabbage
-
1 small carrot, grated

1 tablespoon lime juice
-
2 tablespoons chopped coriander

¼ teaspoon fine salt
To Serve

8 small tortillas

1 ripe avocado, sliced

1 lime, cut into wedges
Directions
Cook the Chicken
Heat coconut oil, cook onion and ginger-garlic paste until soft. Add spices and a splash of water.
Add chicken, cook until browned, then add coconut milk and simmer until the sauce coats the pieces.
Make the Slaw
Mix cabbage, carrot, lime juice, coriander and salt.
Assemble
Warm tortillas. Fill with slaw, chicken and avocado. Finish with lime.
