This dish features tender beef pieces cooked with a blend of aromatic spices, coconut slices, and fresh curry leaves, all sautéed in rich coconut oil. Ingredients
- 500g beef, cut into small pieces
- 2 large red onions, thinly sliced
- 100 g coconut flesh thinly sliced
- 2 tomatoes, chopped
- 1 tablespoon chopped garlic
- 1 tablespoon chopped ginger
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 2 teaspoons Kashmiri red chilli powder
- 1 teaspoon hot red chilli powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon black pepper powder
- 1 teaspoon fennel powder
- 1 sprig curry leaves
- 2 tablespoons coconut oil
- 1 teaspoon mustard seeds
- Salt, to taste
- Water, as needed
Directions
Marinate the Beef:
- In a bowl, combine the beef pieces with turmeric powder, ginger and salt. Mix well and set aside for at least 30 minutes.
Cook the Beef:
- Use a heavy bottom pan to slow cook the beef in a low flame until 85% done. Or heat a pressure cooker and add the marinated beef along with 1 cup of water. Cook for 3-4 whistles until the beef is tender. Set aside.
Prepare the Roast:
- In a large pan, heat coconut oil. Fry the coconut flakes and remove. Add the mustard seeds and followed by curry leaves and sauté for a few seconds.
- Add the sliced onions and green chilies. Sauté until the onions turn golden brown.
- Add the garlic and sauté until the raw smell disappears.
- Add the coriander powder, both the chilli powder and saute
- Add the chopped tomatoes and cook until they become soft and oil starts to separate.
- Add the cooked beef along with any remaining liquid from the pressure cooker. Mix well.
- Add garam masala, fennel powder and black pepper powder. Cook on low heat, stirring occasionally, until the beef is well roasted and the masala coats the pieces evenly.
- Sprinkle a few curry leaves and fried coconut flakes to the curry and serve warm.
